Tea Cup Lemon Curd Cheesecake

It's summertime and I like life to be easy, I also have a very sweet tooth so I've found a very easy cheesecake recipe for you all. it also looks rather pretty in proper teacups.

You can if you want make your own lemon curd, but I never do I always buy mine, I'm a tad lazy like that !

Lemon Curd:

  • 3 egg yolks

  • 1 whole egg

  • 3/4 cup sugar

  • 1/2 cup lemon juice

  • zest of 2 lemons

  • 4 tablespoons unsalted butter , cut into small cubes

Graham cracker crust:
  • 1 1/2 cups graham cracker crumbs

  • 2 Tbsp granulated white sugar

  • 6 Tbsp unsalted butter , melted

Cheesecake Filling:
  • 1 8-oz/227g pkg cream cheese at room temperature

  • 1/4 cup granulated white sugar

  • 1 tsp vanilla extract

  • 1 cup whipping cream (35%)

  • 3 egg yolks

  • 1 whole egg

  • 3/4 cup sugar

  • 1/2 cup lemon juice

  • zest of 2 lemons

  • 4 tablespoons unsalted butter , cut into small cubes
