Comfort Food
When I was younger (I'm ancient) I had an aunt who taught myself and my sisters to bake. To be honest the smell of baking on a cold afternoon always brings me back to open fires and big bowls of hot puddings.
She taught us how to make bread and butter pudding which with some custard was without doubt the most delicious bread pudding I've ever had.
So today I cam across this which is a bread pudding with a little difference. I haven't tried it myself yet but I will and report back later on my efforts.
Cranberry and Orange Bread Pudding
1/2 a baguette a day old
2 cups of cream
1/2 tsp of vanilla
3 eggs
1/2 cup of white sugar
3/4 cup of cranberries
1 1/2 tbsp of orange marmalade or juice
Cut the bread into cubes and place in a bowl. In another bowl whisk together 2 cups of cream, the vanilla, eggs and sugar. pour this mixture of the cubed bread and let it stand for about half an hour.
Pre heat the oven to 350 degs and prepare your serving dish. Grease well and place on a baking tray to catch any overspills.
Add the cranberries and marmalade to the bread mixture and mix well.
Using a slotted spoon spoon the bread mixture into your serving dish or dishes, I like to use cups, they look nice, and if they can be washed in a dishwasher they can usually stand the heat of an oven. Pour the remaining liquid over the top, leaving about 1/4 of an inch at the top of the dish.
Bake for 50/60mins until your inserted knife comes out clean. Check at 40mins and if it's already brown pop some foil on top until fully cooked.
You can serve with a butterscotch sauce or cream or both, remember it's comfort food.
