I'm very fond of lemon, I also rather enjoy baking, however I like to keep things as simple as possible. As long as it's quick, delicious I'm there.
So this evening I'm sharing with you a very simple recipe for lemon lava cakes.
1 Jar of lemon curd
For the cake
100g unsalted butter plus a little extra for greasing
80g caster sugar
2 Tbsp milk
1tsp of lemon zest
100grms of flour
I prefer to use ramekins but you can use a pie dish.
Pre heat your oven 400 degs
Grease your ramekins
In a bowl or your mixer, mix your sugar and butter until fluffy.
Add the eggs and the milk while still mixing not forgetting the lemon zest
Finally add the flour until everything is mixed well together.
Now pop some lemon curd into your ramekins. Divide the batter equally into the six ramekins and bake for 15 to 20 minutes or until golden brown.
Run your knife around the ramekins and pop out onto a plate and serve straight away.
When you cut into them the Lemon Curd runs out like lava..
